Yes you've read the title right. How To NOT Make Blueberry Compote Cupcakes! I was sceptical of writing this blog post, mainly because the cakes didn't quite come out how I wanted them to, but it might be useful to know what not to do next time.I was inspired by another Cox Cookies & Cakes recipe, but used my own cupcake recipe and then followed the compote instructions.
For the basic cupcake recipe you will need:
- 3 eggs
- 125g of margarine
- 125g of caster sugar
- 125g of self-raising flour
- 1 tsp of vanilla extract
For the vanilla buttercream recipe you will need:
- 250g of unsalted butter
- 600g of icing sugar
- 2 tbsp of milk
- 1 tsp of vanilla extract
For the blueberry compote recipe you will need:
- 150g of blueberries
- 50 of caster sugar
Start off with the basic cupcake recipe and cream the margarine and sugar together. Also remember to preheat the over to 200 C/ fan 180 C/gas mark 6
Then add in the flour, eggs and vanilla essence, until it looks like this!
Soften until it looks something like this! Then take off the heat and leave to cool.
SUPER IMPORTANT: Set out twelve cupcake cases (this recipe will more than likely make more!) and only fill the cases to just under half.
Make a little well in each and fill with the blueberry compote, then cover over with more cupcake mixture. Make sure it's totally covered otherwise the compote will spill out! An example on the right...
This was the mistake I made and why I was slightly apprehensive of posting this recipe, so make sure you get this step correct.
Bake for about 10-15 minutes, checking at various intervals until golden brown (and smelling delicious.)
To make the vanilla icing, simply add all the products together in a bowl, then whisk until light and fluffy. Use a palette knife to put the mixture on the cake and voila!
And finally eat your cakes. The sweetness from the blueberries complement the vanilla from the buttercream very well, that you just can't resist eating one or two!
